    Prepare the Oxtail

    Season the oxtail with salt and black pepper. In a large pot, heat a tablespoon of oil over medium-high heat. Brown the oxtail on all sides, about 5-7 minutes. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion, minced garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.

    Add Ingredients

    Return the browned oxtail to the pot. Add shiitake mushrooms, beef broth, soy sauce, and black peppercorns. Bring to a boil.

    Slow Braise

    Reduce heat to low, cover, and let it simmer for 3-4 hours until the oxtail is tender and falling off the bone. Stir occasionally.

    Cook Rice

    While the soup is cooking, prepare the white rice according to package instructions.

    Finish and Serve

    Once the oxtail is done, taste and adjust seasoning with salt if needed. Stir in chopped cilantro just before serving. Serve hot with a side of white rice.
