Bone Marrow
Method
Preparation and Cooking
- 1
Prepare the Garlic Maitre d’Hotel Butter
In a medium bowl, mix the softened unsalted butter with minced garlic, chopped fresh parsley, lemon juice, salt, and pepper. Blend until smooth and set aside.
- 2
Broil the Bone Marrow
Preheat your broiler to high. Place the canoe-cut bone marrow on a baking sheet, cut side up. Sprinkle with salt and pepper. Broil for about 10-15 minutes, or until the marrow is bubbling and golden brown.
- 3
Prepare the Focaccia Toast Points
While the marrow is broiling, toast the focaccia slices until golden brown. You can do this in a toaster or under the broiler for a couple of minutes, turning once.
