    Prepare the Pork Chop

    Season the bone-in pork chop with salt, black pepper, minced garlic, and grated ginger. Let it marinate for at least 30 minutes.

    Cook the Pork Chop

    In a large skillet, heat olive oil over medium-high heat. Sear the pork chop for about 4-5 minutes on each side until golden brown. Reduce heat to medium-low and cook for an additional 10-15 minutes until the internal temperature reaches 145°F (63°C).

    Prepare the Lomi Tomato

    In a bowl, mix diced Lomi tomatoes with chopped green onions and a pinch of salt. Set aside.

    Make the Luau Puree

    Peel and cube the Okinawan sweet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and blend with coconut milk until smooth. Season with salt to taste.

    Serve

    On a plate, serve the pork chop alongside a generous scoop of Luau puree and top with the Lomi tomato mixture. Garnish with additional green onions if desired.
