For the Smoked Prime Rib

    Prepare the Prime Rib

    Preheat your smoker to 225°F (107°C).

    Season the Meat

    Combine salt, black pepper, garlic powder, onion powder, and smoked paprika in a bowl. Rub the olive oil all over the prime rib, then generously coat with the spice mixture.

    Smoke the Prime Rib

    Place the seasoned prime rib on the smoker and smoke for about 4-5 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let it rest for 20 minutes before slicing.

For the Caramelized Onions

    Slice the Onions

    Thinly slice the yellow onions.

    Cook the Onions

    In a skillet, melt butter over medium heat. Add the sliced onions and sprinkle with salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are golden brown.

    Add Brown Sugar

    Stir in the brown sugar and cook for an additional 5 minutes until the onions are caramelized.

For the Creamy Horseradish Sauce

    Mix the Ingredients

    In a bowl, combine sour cream, prepared horseradish, Dijon mustard, and lemon juice. Mix until smooth and season with salt to taste.

For the Sandwich Assembly

    Assemble the Sandwich

    Slice the smoked prime rib into thin slices. Place slices on the sandwich rolls or baguette. Top with caramelized onions and a slice of Havarti cheese.
