Method
Preparing the Shrimp

Prepare the Breading
In a shallow bowl, combine flour, cornmeal, Cajun seasoning, salt, and black pepper. Mix well.

Prepare the Wet Mixture
In another bowl, whisk together eggs and buttermilk until smooth.

Coat the Shrimp
Dip each shrimp into the wet mixture, then dredge in the flour mixture, ensuring they are well coated.
Frying the Shrimp

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully place the coated shrimp in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and cooked through.

Drain the Shrimp
Remove the shrimp from the oil and place them on paper towels to drain excess oil.
Preparing Woody's Sauce

Mix the Sauce
In a bowl, combine mayonnaise, ketchup, hot sauce, lemon juice, garlic powder, and salt. Stir until well blended.
Assembling the Po'boy

Prepare the Bread
Slice the French bread or hoagie rolls lengthwise but not all the way through, creating a pocket for the fillings.

Add Fillings
Layer the shredded lettuce, sliced tomatoes, and pickles inside the bread. Top with a generous portion of fried shrimp.

Add Sauce
Drizzle Woody's Sauce generously over the shrimp.
