    Cook the Potatoes

    Wash and peel the potatoes. Cut them into bite-sized pieces and place them in a large pot. Fill the pot with water until the potatoes are fully submerged. Add a pinch of salt and bring the water to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10-15 minutes, or until the potatoes are tender but not mushy. Drain the potatoes and let them cool.

    Prepare Vegetables

    While the potatoes are cooling, chop the celery, red onion, and hard-boiled eggs into small pieces. Finely chop the fresh parsley as well.

    In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Whisk the ingredients together until smooth and well combined.

    Once the potatoes have cooled, gently fold them into the dressing mixture along with the chopped celery, red onion, hard-boiled eggs, and parsley. Stir carefully to avoid mashing the potatoes.
