Prepare the Onions
Peel the large onions and slice them into 1/2 inch thick rings. Separate the rings and set aside.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. In another bowl, combine the buttermilk and eggs, then whisk until well blended.

Combine and Coat
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick. Dip each onion ring into the batter, allowing excess to drip off, then coat with panko breadcrumbs.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

For the Rémoulade Dipping Sauce

Mix the Sauce
In a medium bowl, combine mayonnaise, Dijon mustard, chopped capers, chopped parsley, lemon juice, garlic powder, salt, and black pepper. Stir until well mixed.

Serve
Serve the crispy onion rings hot with the Rémoulade dipping sauce on the side.
