Mahi Preparation

Method

Mahi Preparation

  1. 1

    Prepare the Mahi

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper to create a spice mix.

  2. 2

    Season the Mahi

Rub the spice mix evenly over both sides of the Mahi Mahi fillets.

  3. 3

    Cook the Mahi

Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned Mahi fillets and cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and let rest for a few minutes before slicing.

Taco Assembly

  1. 4

    Prepare the Creamy Lime Dressing

In a bowl, mix mayonnaise, lime juice, and chopped cilantro until well combined. Adjust seasoning if necessary.

  2. 5

    Warm the Tortillas

In a separate skillet, warm the corn tortillas over low heat for about 30 seconds on each side until soft and pliable.

  3. 6

    Assemble the Tacos

On each tortilla, place a generous amount of sliced cabbage, followed by pieces of the cooked Mahi. Top with pico de gallo and drizzle with the creamy lime dressing.

  4. 7

    Serve

Serve the tacos warm, garnished with additional cilantro if desired.
