Prepare the Cucumber Wasabi Sauce

Make the Sauce
In a bowl, combine the grated cucumber, wasabi paste, Greek yogurt (or sour cream), lemon juice, and salt. Mix well until smooth. Set aside in the refrigerator to chill while you prepare the fish and sandwich.
Cook the Mahi Mahi

Season the Fish
Pat the Mahi Mahi fillets dry with paper towels. Rub the blackening seasoning (or lemon pepper seasoning) evenly over both sides of the fillets.

Cook the Fillets
Add the seasoned Mahi Mahi fillets to the skillet. Cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust. Remove from heat and let rest for a minute.
Assemble the Sandwich

Layer Ingredients
On the bottom half of each sandwich roll, place 2 lettuce leaves. Top with a cooked Mahi Mahi fillet, then add slices of tomato and red onion. Generously drizzle the cucumber wasabi sauce over the top.

Complete the Sandwich
Cover with the top half of the sandwich roll. Press down lightly to secure the ingredients.

Serve the Mahi Fish Sandwich with a side of potato chips or fries.
