Prepare the Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, mix together the mayonnaise, chipotle peppers in adobo sauce, and lime juice until well combined. Set aside.
Prepare the Burger Patties

Mix the Meat
In a large bowl, combine the chorizo sausage and ground Angus beef. Season with salt and black pepper. Mix until evenly combined but do not overwork the meat.

Form Patties
Divide the meat mixture into 4 equal portions and shape each portion into a patty.
Cook the Patties

Grill the Patties
Preheat a grill or frying pan over medium-high heat. Cook the patties for about 5-7 minutes on each side, or until they reach your desired doneness.

Add Cheese
In the last minute of cooking, place a slice of Pepper Jack cheese and a slice of Cheddar cheese on each patty. Cover to melt the cheese.
Assemble the Burgers

Prepare the Buns
Toast the burger buns on the grill or in a toaster until lightly golden.

Build the Burger
Spread a generous amount of chipotle mayo on the bottom half of each bun. Place the cooked patty on top, add fried jalapeños, and top with tortilla straws. Cover with the top half of the bun.
