    Prepare the Potatoes

    Wash the russet potatoes under cold water to remove any dirt. Peel the potatoes if desired, then cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Dry and Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture. Carefully add a batch of the potatoes to the hot oil, ensuring not to overcrowd the pot. Fry the potatoes for about 4-5 minutes, or until they are golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle the fries with salt, black pepper, and garlic powder to taste.
