Method

Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Carefully add the dried fries in batches and fry for 5-7 minutes until golden brown. Remove and drain on paper towels. Season with salt and pepper.

Preparing the Fish

    Make the Batter

    In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until you achieve a smooth batter.

    In a deep pot, heat the vegetable oil to 350°F (175°C) for frying the fish.

    Batter the Fish

    Dip each fish fillet into the batter, allowing the excess to drip off.

    Carefully place the battered fish fillets into the hot oil in batches. Fry for 4-6 minutes or until golden brown. Remove and drain on paper towels.

    On a serving plate, arrange the crispy fries beside the fried fish. Serve with lemon wedges and a side of tartar sauce.
