Preparing the Beans

    In a large bowl, combine the dried pinto, black, and kidney beans. Cover them with water and let them soak overnight (or at least 8 hours). Drain and rinse the beans before cooking.

    In a large pot, add the soaked beans and cover them with vegetable broth. Bring to a boil, then reduce heat to a simmer. Cook for 1 to 1.5 hours, or until the beans are tender. Keep an eye on the liquid level and add more broth if necessary.

    While the beans are cooking, dice the onion, garlic, bell pepper, carrot, and celery into small pieces.
