Prepare the Chipotle Mayo

    Make the Chipotle Mayo

    In a small bowl, combine the mayonnaise, chipotle peppers, and lime juice. Mix well until all ingredients are fully incorporated. Set aside in the fridge to allow the flavors to meld.

Cook the Bacon and Jalapeños

    Fry the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and place on paper towels to drain excess grease.

    Fry the Jalapeños

    In the same skillet, add the sliced jalapeños and fry until they are golden and crispy. Remove and set aside.

Prepare the Burger Patties

    Form the Patties

    In a mixing bowl, combine the ground beef with salt and black pepper. Divide the mixture into two equal portions and shape them into burger patties.

    Cook the Patties

    In a skillet or grill over medium-high heat, cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness. Place a slice of Pepper Jack cheese on each patty during the last minute of cooking to melt.

    Make Cheese Bombs

    In a bowl, mix the mozzarella and cheddar cheeses together. Form into two balls or patties. Place them in the skillet for 1-2 minutes until they are melted and slightly crispy on the outside.

Assemble the Burger

    Build the Burger

    On the bottom half of each burger bun, spread a generous amount of the chipotle mayo. Add the lettuce, the cooked burger patty with melted cheese, crispy bacon, and fried jalapeños. Top it off with the cheese bombs and finish with the top half of the bun.
