Shrimp and Batter

Method

Preparing the Shrimp

    Prepare the Shrimp

    In a bowl, combine the shrimp, salt, black pepper, and paprika. Let it marinate for about 15 minutes.

    Make the Batter

    In a separate bowl, whisk together the all-purpose flour, cornstarch, and a pinch of salt. In another bowl, mix the beaten egg and cold water. Gradually add the egg mixture into the flour mixture, stirring until smooth.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Dredge the marinated shrimp in the batter, allowing excess to drip off. Carefully place the shrimp in the hot oil and fry in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Assemble the Tacos

    On each tortilla, layer a handful of thinly sliced cabbage, followed by a few crispy fried shrimp. Top with pico de gallo, drizzle with Spicy Sweet Chili Sauce, and finish with a dollop of creamy lime dressing.

    Serve the tacos immediately with your choice of side. Enjoy!
