Burger Preparation

    Make the Burger Patties

    In a large bowl, combine the ground Angus beef and andouille sausage. Add cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Mix until well combined. Form into 4 equal patties.

Fried Green Tomatoes

    Prepare the Green Tomatoes

    Slice the green tomatoes into 1/2 inch thick rounds. In a bowl, mix the buttermilk with salt and black pepper. Dip each tomato slice into the buttermilk, then dredge in a mixture of cornmeal and flour.

    Fry the Tomatoes

    In a large skillet, heat oil over medium-high heat. Fry the tomato slices in batches until golden brown on both sides, about 3-4 minutes per side. Remove from the skillet and drain on paper towels.

Rémoulade Sauce Preparation

    Make the Rémoulade Sauce

    In a small bowl, combine mayonnaise, Dijon mustard, chopped capers, parsley, lemon juice, and hot sauce. Mix well and set aside.

Burger Assembly

    Cook the Burger Patties

    Grill or pan-fry the burger patties over medium-high heat for about 5-7 minutes on each side, until fully cooked. In the last minute of cooking, top each patty with a slice of Pepper Jack cheese to melt.

    Assemble the Burger

    On each burger bun, layer lettuce leaves, a cooked patty with melted cheese, a fried green tomato slice, and a generous dollop of rémoulade sauce. Top with sliced red onion and the top bun.
