Prepare the Pork
In a large bowl, combine smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Rub the spice mixture all over the pork shoulder.

Cook the Pork
Place the chopped onion and minced garlic at the bottom of the slow cooker. Add the seasoned pork shoulder on top. Cover and cook on low for 8-10 hours, until the pork is tender and easily pulls apart.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix in the BBQ sauce. Let it cook on low for an additional 30 minutes.

Toast the Buns
While the pork is finishing, slice the hamburger buns in half and toast them lightly on a grill or in a toaster.

Assemble the Sandwiches
Place a generous amount of the BBQ pulled pork on the bottom half of each toasted bun. Top with a scoop of coleslaw and add the top bun.

Serve
Serve the pulled pork sandwiches warm with pickle slices on the side, if desired.
