    Prepare the Mash

    In a large brew kettle, heat 3 gallons of water to 160°F (71°C). Add the pale malt and wheat malt, stirring well to ensure no dry clumps remain. Maintain a temperature of 150°F (65°C) for 60 minutes.

    Sparging

    After the mash is complete, sparge with 2 gallons of hot water to rinse the grains. Collect the wort in the kettle.

    Boil the Wort

    Bring the wort to a boil. Once boiling, add the bittering hops and boil for 60 minutes. Add the aroma hops in the last 5 minutes of the boil.

    Add Raspberry Puree

    After the boil, remove the kettle from heat and stir in the raspberry puree. Allow the wort to cool to 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Ferment for 1-2 weeks at a consistent temperature of 68°F (20°C).

    Bottling

    Once fermentation is complete, dissolve priming sugar in about 2 cups of boiling water. Add this to the bottling bucket, then transfer the beer from the fermenter to the bottling bucket, mixing gently.

    Bottle the Beer

    Fill sanitized bottles with the beer, leaving about an inch of headspace. Cap the bottles and store them at room temperature for carbonation.

    Enjoy

    After about 2 weeks, chill the bottles in the fridge, pour into a glass, and enjoy your Wasatch Raspberry Wheat!
