Cooking Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions. Drain and set aside.
Prepare the Chicken
Rub the chicken breasts with olive oil and Cajun seasoning. Heat a grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes per side, or until fully cooked and juices run clear. Remove from heat and let rest before slicing.
Make the Alfredo Sauce
In a saucepan over medium heat, melt butter and sauté minced garlic for about 1 minute. Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until the cheese has melted and the sauce is creamy. Season with salt and pepper to taste.
Combine Pasta and Sauce
In a large bowl, combine the cooked penne pasta with the Alfredo sauce, tossing well to coat.
Serve
Plate the pasta and top with sliced Cajun chicken. Garnish with chopped green onions. Serve with toasted cheddar bread on the side.
