Prepare Chicken

Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side, or until fully cooked through. During the last few minutes of grilling, brush the chicken with Double Barrel BBQ sauce and top with shredded sharp cheddar cheese.

Cook Bacon and Vegetables

In a skillet, cook chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pan. Add sliced onions and mushrooms to the skillet, and sauté until softened, about 5-7 minutes.

Prepare Mashed Potatoes

In a large pot, add quartered red skin potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain the potatoes and return to the pot. Add butter, milk, salt, and pepper. Mash until creamy and smooth.

Assemble the Loaded Bird

Once the chicken is cooked, top each breast with the sautéed onions, mushrooms, and the crispy bacon. Serve alongside the red skin mashed potatoes and fresh veggies.
