Warm Pretzel Twists
Method
Preparation and Queso
- 1
Make the Pretzel Dough
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add flour and salt, mix until a dough forms. Knead for about 5-7 minutes until smooth.
- 2
Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- 3
Shape the Pretzels
Preheat your oven to 450°F (230°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.
- 4
Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water and the baking soda to a boil. Boil each pretzel for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

Prepare the Queso
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 1 tablespoon of flour and stir for 1 minute. Gradually whisk in 2 cups of milk, stirring until thickened. Add 2 cups of shredded cheese (like cheddar) and stir until melted. Season with salt and pepper to taste.
