    Prepare the Hash

    In a large skillet, cook the bacon bits and breakfast sausage over medium heat until browned and crispy. Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 5 minutes.

    Combine Ingredients

    Add the cooked bacon and sausage back to the skillet with the vegetables. Stir in the mixed cheese until melted and combined. Season with salt and pepper to taste.

    Cook the Eggs

    In a separate pan, fry the eggs over-easy to your preferred doneness.

    Prepare Sausage Gravy

    In a small saucepan, cook 1/2 cup of breakfast sausage over medium heat. Once browned, add 2 tablespoons of flour and stir for 1 minute. Gradually whisk in 1 cup of milk, cooking until thickened. Season with salt and pepper.

    Assemble the Dish

    Serve the hash mixture on a plate, top with the over-easy eggs, and generously smother with sausage gravy.
