    Cook the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Broth

    Pour in the crushed tomatoes and vegetable broth. Stir to combine and bring to a simmer. Let it cook for about 15 minutes to allow the flavors to meld.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.

    Add Cream and Basil

    Stir in the heavy cream and chopped basil. Season with salt and black pepper to taste. Cook for an additional 5 minutes on low heat.

    Ladle the bisque into bowls, top with shaved Parmesan cheese, and serve with slices of cheese bread.
