Chicken and Coleslaw

Method

Preparation and Cooking

  1. 1

    Marinate the Chicken

In a bowl, mix brown sugar, hot sauce, salt, black pepper, garlic powder, and paprika. Add chicken breasts, coating them well. Let marinate for at least 30 minutes.

  2. 2

    Prepare the Coleslaw

In a separate bowl, combine mayonnaise, miso paste, grated ginger, cabbage, and grated carrot. Mix well to combine, then set aside in the refrigerator to chill.

  3. 3

    Fry the Onion Straws

Heat oil in a frying pan. Dip thinly sliced onions in flour, then in beaten egg, and finally in breadcrumbs. Fry until golden brown. Remove and drain on paper towels.

  4. 4

    Cook the Chicken

Grill the marinated chicken on medium heat for 6-8 minutes on each side until fully cooked or fry in a pan until golden brown and cooked through.

  5. 5

    Assemble the Sandwiches

Place cooked chicken on the bottom half of each bun. Top with miso-ginger coleslaw, onion straws, and a generous dollop of spicy garlic aioli. Add the top half of the bun.
