Chips and Salsa

    Make the Salsa

    Dice the tomatoes, onion, and jalapeño finely. Combine them in a bowl with chopped cilantro, lime juice, and salt. Mix well and let sit for 30 minutes for flavors to meld.

    Serve

    Serve the salsa with tortilla chips.

Guacamole

    Prepare the Guacamole

    Mash the avocados in a bowl. Add lime juice, salt, diced onion, diced tomato, and chopped cilantro. Mix until combined.

    Serve the guacamole with tortilla chips or as a topping for nachos.

Cajun Onion Straws

    Prepare the Onions

    Slice the onion into thin strips. Soak in buttermilk for 30 minutes.

    Coat and Fry

    In a bowl, mix flour and Cajun seasoning. Dredge the soaked onion strips in the flour mixture and fry in hot oil until golden brown. Drain on paper towels.

Garlic Fries

    Cut the potatoes into fries and soak in water for 30 minutes. Drain and dry.

    Heat olive oil in a fryer or large pot. Fry the potatoes until golden and crispy. Drain and toss with minced garlic, salt, and chopped parsley.

Nachos

    Layer tortilla chips on a baking sheet. Sprinkle shredded cheese, black beans, and sliced jalapeños on top. Bake at 350°F (175°C) for 10 minutes or until cheese is melted.
