Brewing Instructions

    Mashing

    In a large brew kettle, heat 15 liters of water to 70°C (158°F). Add the crushed pale malt, crystal malt, and caramel malt to the water and stir well.

    Steeping

    Maintain the mash temperature for about 60 minutes, stirring occasionally. After 60 minutes, sparge with hot water to collect the wort.

    Boiling

    Bring the wort to a boil and add the Cascade hops. Boil for 60 minutes, adding the Centennial hops in the last 15 minutes of the boil.

    Cooling

    After boiling, cool the wort quickly using a wort chiller or ice bath until it reaches about 20°C (68°F).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment at around 20°C (68°F) for 1-2 weeks.

    Bottling

    Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer and cap the bottles.

    Conditioning

    Allow the bottled beer to condition at room temperature for 1-2 weeks before refrigerating and serving.
