Brewing Ingredients
Method
Brewing Directions
- 1
Mashing
In a large pot, heat 20 cups of water to approximately 165°F (74°C). Add the Pilsner, Munich, Caramel, and Chocolate malts to the water, stirring well. Maintain the temperature between 150°F to 155°F (65°C to 68°C) for 60 minutes.
- 2
Lautering
After mashing, remove the grains from the liquid using a strainer or lauter tun. Rinse the grains with an additional 5 cups of hot water to extract more sugars.
- 3
Boiling
Bring the extracted liquid (wort) to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes. Stir occasionally.
- 4
Cooling
After the boiling process, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
- 5
Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Add the lager yeast, seal the vessel, and let it ferment in a cool place (around 50°F to 55°F or 10°C to 13°C) for 2 weeks.
- 6
Bottling
After fermentation, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them. Allow the bottles to condition at room temperature for another 2 weeks.
