Prepare the Dough
In a mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. In another bowl, beat the eggs, then mix in the milk, vanilla extract, and melted butter. Combine the wet and dry ingredients until just mixed.

Fry the Doughnut Holes
Heat vegetable oil in a deep pan to 350°F (175°C). Use a small cookie scoop or spoon to drop batter into the hot oil, frying in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Make the Caramel Sauce
In a saucepan, melt sugar over medium heat until it becomes a golden brown caramel. Carefully add heavy cream and stir until smooth. Add butter and bourbon, and mix until combined. Remove from heat and let cool slightly.

Plate the Dish
Serve warm cinnamon doughnut holes with a scoop of vanilla ice cream and drizzle with bourbon caramel sauce.
