Cook the Chicken
In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the chicken breast and cook until browned on both sides, about 5 minutes.

Combine Ingredients
Add the diced tomatoes, green chilies, corn, chicken broth, cumin, chili powder, salt, and pepper to the pot. Stir well to combine.

Simmer the Soup
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the chicken is cooked through.

Shred the Chicken
Remove the chicken breast from the pot and shred it using two forks. Return the shredded chicken to the pot and stir to combine.

Ladle the soup into bowls, top with tortilla strips and a generous dollop of southwest crema. Enjoy!
