Chef's Bacon Mac & Cheese Recipe
A blend of four cheeses melted over penne pasta mixed with applewood smoked bacon and green onions. Served with cheddar bread. Add chopped Sticky Fingers for an additional charge.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.

Cook the Bacon
In a large skillet, cook the applewood smoked bacon over medium heat until crispy. Remove and drain on paper towels. Once cooled, chop into bite-sized pieces.

Make the Cheese Sauce
In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes. Gradually add the milk, whisking until smooth and thickened. Stir in the cheddar, Monterey Jack, Gruyère, and Parmesan cheeses until melted and creamy. Season with salt and black pepper.

Combine Ingredients
In a large mixing bowl, combine the cooked penne pasta, cheese sauce, chopped bacon, and sliced green onions. Mix until the pasta is well coated.

Serve
Transfer the mac and cheese into a serving dish. Optionally, sprinkle additional cheese on top and broil until golden. Serve with cheddar bread on the side.
