Prep the Onion
Slice the sweet onion into thin rings, about 1/4 inch thick. Separate the rings and set aside.

Prepare the Breading
In a bowl, combine flour, Cajun spice mix, salt, and black pepper. In another bowl, pour the buttermilk.

Bread the Onion Rings
Dip each onion ring into the buttermilk, allowing excess to drip off. Then coat with the flour mixture, ensuring it's fully covered. Set aside on a plate.

Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Onion Straws
Carefully add the breaded onion rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
