Buffalo Salmon Fingers

Preparation

Prepare the Salmon
Cut the salmon fillets into strips about 1 inch wide. Season with salt and pepper.

Set Up Battering Station
In three separate bowls, place flour, cornstarch, and a mixture of beaten eggs and milk. In a fourth bowl, place panko breadcrumbs.

Batter the Salmon
Dip each salmon strip first in flour, then in the egg mixture, and finally coat with panko breadcrumbs.

Fry the Salmon
Heat vegetable oil in a large pan over medium-high heat. Fry the salmon strips until golden brown and cooked through, about 3-4 minutes on each side. Drain on paper towels.

Prepare the Fries
Cut the potatoes into fries and deep fry them in the same oil until golden and crispy. Drain on paper towels and season with salt.

Make Miso-Ginger Coleslaw
In a large bowl, combine shredded cabbage and carrot. In a separate bowl, mix miso paste, grated ginger, mayonnaise, lemon juice, and salt to make the dressing. Pour over the coleslaw and toss to combine.

Serve
Plate the buffalo salmon fingers with seasoned fries and miso-ginger coleslaw. Drizzle buffalo sauce over the salmon fingers.
