Prepare the Cauliflower
Cut the cauliflower into bite-sized florets and set aside.

Make the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, and salt. Gradually add the water until a smooth batter forms.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Cauliflower
Dip each cauliflower floret into the batter, ensuring it's fully coated.

Fry the Cauliflower
Carefully place the battered cauliflower into the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Prepare the Buffalo Sauce
In a small saucepan over medium heat, melt the butter. Stir in the hot sauce, garlic powder, and salt until combined.

Toss in Sauce
In a large bowl, toss the fried cauliflower in the buffalo sauce until evenly coated.

Serve hot with your choice of dipping sauce or garnishes.
