Pancake Batter

Method

Pancake Preparation

  1. 1

    Prepare the Batter

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

  3. 3

    Mix Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are fine.

  4. 4

    Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

  5. 5

    Add Berries

While the pancakes are cooking, sprinkle a handful of fresh berries (blueberries, raspberries, or strawberries) on top of each pancake after flipping.

  6. 6

    Serve

Serve the pancakes warm with maple syrup, whipped cream, or additional berries on top.
