Prepare the batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the Amazing Blonde beer until the batter is smooth and thick.

Heat the oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter and fry the fish
Dredge each Mahi-Mahi filet in the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve the beer battered fish hot with tartar sauce, cilantro-lime coleslaw, and fries on the side.
