    Prepare the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into small pieces.

    In the same skillet, sear the beef chuck roast on all sides until browned. Remove the beef and set aside.

    In the same skillet, add chopped onion and garlic. Sauté until translucent and fragrant.

    In a slow cooker, combine the seared beef, sautéed onions and garlic, chipotle peppers, beef broth, lime juice, cumin, oregano, salt, and black pepper. Mix well.
