Preparing the Potatoes
Cutting the Potatoes
Cut the peeled potatoes into thin strips, about 1/4 inch thick. Try to keep the size uniform for even cooking.
Soaking
Place the cut potato strips in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch. This helps achieve a crispier fry.
Frying the Potatoes
Preheat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the fries completely.
Drying the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This step is crucial to avoid oil splatters.
Frying
Carefully add a handful of the dried potato strips to the hot oil. Fry in batches to avoid overcrowding. Cook for about 4-5 minutes, or until golden brown and crispy.
Draining the Fries
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. While still hot, sprinkle with salt and paprika for seasoning.
Serving
Plating
Place the crispy fries on a serving plate. Serve alongside a small bowl of ketchup for dipping.
