Method
Crispy Calamari
Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.
Coat the Calamari
Dip each calamari ring into the wet mixture, then dredge in the flour mixture until evenly coated.
Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Carefully add the coated calamari rings to the hot oil, frying in batches to avoid overcrowding. Cook for 2-3 minutes or until golden brown and crispy.
Drain and Serve
Remove the calamari from the oil and place on paper towels to drain excess oil. Serve immediately.
Spicy Aioli
Combine Ingredients
In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt.
Mix Well
Stir the ingredients together until smooth and well combined.
Chill
Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld together.
