Preparation Steps

    Prepare the Noodles

    Soak rice noodles in warm water for about 30 minutes until softened, then drain.

    Cook the Protein

    In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add chicken and shrimp, and cook until fully cooked, about 4-5 minutes. Remove from skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of oil. Crack the eggs into the skillet and scramble until cooked. Remove and set aside.

    Stir Fry the Ingredients

    Add the remaining oil, garlic, and softened noodles to the skillet. Stir-fry for about 2-3 minutes.

    Combine Everything

    Return the cooked chicken and shrimp to the skillet. Add bean sprouts, green onions, peanut butter, soy sauce, fish sauce, lime juice, and red pepper flakes. Toss to combine and heat through for another 2-3 minutes.

    Serve

    Serve hot, garnished with crushed peanuts and chopped coriander.
