Prepare the Mochi Dough
In a microwave-safe bowl, combine sweet rice flour, sugar, and water. Stir until smooth. Cover the bowl with plastic wrap, leaving a small opening for steam to escape. Microwave on high for 1 minute, stir, cover, and microwave for another 1 minute. Repeat until the dough is sticky and slightly translucent (about 3 minutes total).

Cool the Dough
Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and let it cool for a few minutes until it is manageable.

Shape the Mochi
Divide the mochi dough into 8 equal pieces. Flatten each piece into a circle about 3 inches in diameter. Place a small scoop of ice cream (about 1-2 tablespoons) in the center of each circle.

Wrap the Ice Cream
Carefully fold the edges of the mochi dough around the ice cream, pinching to seal it completely. Make sure the ice cream is fully enclosed in the mochi.

Freeze the Mochi Ice Cream
Dust the finished mochi ice cream with cornstarch to prevent sticking. Place them on a tray lined with parchment paper and freeze for at least 2 hours until firm.
