Soup Preparation

    Prepare the Broth

    In a large pot, bring the chicken broth to a boil over medium-high heat.

    Add Vegetables and Tofu

    Add the sliced shiitake mushrooms, wood ear mushrooms, carrots, and cubed tofu to the pot. Let it simmer for about 5 minutes.

    Season the Soup

    Stir in the soy sauce, rice vinegar, and white pepper. Adjust the flavor to your liking.

    Thicken the Soup

    In a small bowl, mix the cornstarch with water to create a slurry. Slowly pour the slurry into the soup while stirring continuously until the soup thickens.

    Finish the Soup

    Drizzle in the sesame oil and slowly pour the beaten egg into the soup while stirring gently to create egg ribbons. Remove from heat.
