Prepare the Marinade
In a bowl, combine soy sauce, minced garlic, and 1 tablespoon of vegetable oil. Mix well and set aside.

Marinate the Chicken
Cut the chicken breast into bite-sized pieces and place them in the marinade. Allow to marinate for at least 15 minutes.

Cook the Chicken
In a large skillet or griddle over medium-high heat, add 1 tablespoon of vegetable oil. Once hot, add the marinated chicken and cook until browned and cooked through, about 7-10 minutes. Remove from skillet and set aside.

Cook the Shrimp
In the same skillet, add another tablespoon of vegetable oil. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove from skillet and set aside.

Stir-fry the Vegetables
Add the remaining tablespoon of vegetable oil to the skillet. Add the sliced zucchini, onion, and bell pepper. Stir-fry for about 5 minutes until tender-crisp.

Combine and Serve
Return the cooked chicken and shrimp to the skillet with the vegetables. Toss everything together for 1-2 minutes. Serve over cooked rice and garnish with chopped green onions.
