Crispy Calamari

Preparation and Cooking

    Marinate the Calamari

    In a large bowl, combine the buttermilk and samba seasoning. Add the calamari rings and mix well to coat. Cover and refrigerate for at least 1 hour.

    Prepare the Coating

    In a shallow dish, mix together the lemon pepper seasoning and all-purpose flour until well combined.

    Make the Garlic-Lemon Aioli

    In a small bowl, mince the garlic cloves and mix with mayonnaise and lemon juice. Season with salt to taste. Set aside.

    Heat the Oil

    In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Remove the calamari from the marinade, letting excess liquid drip off. Dredge each ring in the lemon pepper flour mixture, shaking off any excess. Fry in batches for about 2-3 minutes or until golden brown. Transfer to a paper towel-lined plate to drain.

    Serve

    Serve the crispy calamari hot with the garlic-lemon aioli on the side.
