Method
Instructions
- 1
Prepare the Brownie Layer
Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan over low heat, then remove from heat and stir in granulated sugar, brown sugar, eggs, and vanilla extract until well combined. In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the brownie batter into a greased 9-inch springform pan and set aside.
- 2
Prepare the Cheesecake Layer
In a large mixing bowl, beat the cream cheese until smooth. Add sour cream and powdered sugar, mixing until combined. Add the eggs one at a time, beating well after each addition. Pour the cheesecake mixture over the brownie layer in the springform pan.
- 3
Bake the Cheesecake
Bake in the preheated oven for 45-50 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- 4
Prepare the Chocolate Ganache
In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the chocolate chips, stirring until smooth and glossy. Let it cool slightly before pouring over the chilled cheesecake.
- 5
Serve
Once the ganache has set, carefully remove the sides of the springform pan. Slice the cheesecake and serve chilled. Enjoy your delicious brownie cheesecake!
