Preparation Instructions
- 1
Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot and cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low and cover for 20 minutes. Once cooked, remove from heat and let it sit covered for an additional 10 minutes.
- 2
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Assemble the Sushi Rolls
Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and grab a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top. Place a line of cucumber, avocado, and crab across the center of the rice. Roll the sushi tightly from the bottom, using the mat to shape it. Seal the edge with a little water.
- 5
Slice and Serve
Using a sharp knife, slice the sushi roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger on the side.
