Prepare the Ahi Tuna
Cut the ahi tuna into small cubes and place it in a mixing bowl.

Mix the Marinade
In a separate bowl, combine soy sauce, sesame oil, and chopped green onions. Pour the marinade over the tuna cubes and mix gently. Let it marinate for about 15 minutes.

Prepare the Cucumber
Thinly slice the cucumber and set aside.

Fry the Wonton Wrappers
In a deep pan, heat the cooking oil over medium heat. Fry the wonton wrappers until golden brown and crispy. Remove and drain on paper towels.

Assemble the Poke
In a serving dish, place a layer of sliced cucumbers, top with the marinated tuna, and sprinkle with sesame seeds. Serve with the crispy wonton wrappers on the side.
