    Prepare the Apples

    Wash and core the apples, then chop them into small pieces. You can choose to peel them or leave the skins on for added flavor.

    Juicing the Apples

    Place the chopped apples into a juicer or blender. If using a blender, add a little water to help the blending process. Blend until smooth, then strain the juice through a fine mesh sieve or cheesecloth into a large pot, discarding the solids.

    Mix Ingredients

    In the same large pot containing the apple juice, add the remaining water, sugar, and lemon juice. Stir the mixture well until the sugar is fully dissolved.

    Add Yeast

    Sprinkle the cider yeast over the mixture and stir gently. Ensure that the temperature of the mixture is around 70-75°F (21-24°C) before adding the yeast to ensure proper fermentation.

    Fermentation Process

    Cover the pot with a clean cloth or use a fermentation lock. Allow the mixture to ferment in a cool, dark place for about 1-2 weeks. Stir the mixture once a day to aerate it.

    Bottling the Cider

    After fermentation, taste the cider. If you'd like it sweeter, you can add more sugar to taste. Then, prepare clean bottles for bottling. Siphon the cider into the bottles, leaving a little space at the top.

    If you want sparkling cider, add a small amount of sugar (about 1 tsp per bottle) before sealing. Cap the bottles tightly.
