Prepare the Brussels Sprouts
Preheat your oven to 200°C (400°F). Rinse the Brussels sprouts under cold water, trim the ends, and remove any yellow or damaged leaves.

Season the Brussels Sprouts
In a large bowl, toss the trimmed Brussels sprouts with olive oil, salt, and black pepper until they are evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer and roast them in the preheated oven for 20-25 minutes, or until they are golden brown and tender, flipping halfway through.

Caramelize the Onion
While the Brussels sprouts are roasting, thinly slice the onion. Heat a tablespoon of olive oil in a skillet over medium heat. Add the onion and cook, stirring occasionally, until caramelized, about 15-20 minutes.

In a small bowl, mix the caramelized onions with the yogurt and honey until well combined. Adjust seasoning with salt if necessary.
