    Prepare the Ginger

    Peel the fresh ginger and slice it into thin rounds. This will help release its flavor during the brewing process.

    Boil the Water

    In a medium saucepan, bring 2 cups of water to a boil over high heat.

    Brew the Tea

    Once the water is boiling, add the Lapsang souchong tea leaves and sliced ginger. Reduce the heat to low and let it simmer for 4-5 minutes.

    Strain the Tea

    After brewing, remove the saucepan from heat and use a fine mesh strainer to strain the tea into a teapot or large mug, discarding the tea leaves and ginger slices.

    Add Honey

    While the tea is still warm, stir in 2 tablespoons of honey until fully dissolved. Adjust the amount of honey to taste, if desired.

    Serve

    Pour the brewed tea into cups and serve hot. Optionally, garnish with a slice of fresh ginger or a drizzle of honey on top.
