SALADS

Method

SALADS

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk until well combined.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure the salmon is evenly coated. Cover and let it marinate in the refrigerator for at least 30 minutes.

  3. 3

    Prepare the Salad Ingredients

While the salmon is marinating, wash and dry the mixed salad greens. Halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Set all the prepared vegetables aside.

  4. 4

    Preheat the Grill

Preheat your grill to medium-high heat. If using a grill pan, place it on the stove over medium-high heat.

  5. 5

    Grill the Salmon

Remove the salmon fillets from the marinade and place them on the grill. Grill for about 4-5 minutes per side, or until the salmon is cooked through and has nice grill marks. Remove the salmon from the grill and let it rest for a few minutes.

  6. 6

    Assemble the Salad

In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Crumble the feta cheese over the top and add the fresh herbs. Toss gently to combine.

  7. 7

    Serve

Flake the grilled salmon and place it on top of the salad. Drizzle any leftover marinade over the top if desired. Serve immediately.
